We’re all feeling a little weary from the over-indulgence during the festive period that we’re quite relieved that it’s now Veganuary!
It doesn’t have to be a time of total austerity though with these fab vegan comfort food ideas. We’ve done the legwork to give you the best vegan recipes for kids.
Vegan Pizza
Ingredients
For the dough 500g strong white flour 1 tsp dried yeast 1 tsp sugar 1 ½ tbsp olive oil 1 tsp salt
For the tomato sauce 100ml passata 1 tbsp chopped fresh basil 1 clove garlic - crushed
For the topping 200g grated vegan mozzarella Additional vegetables (mushrooms, onions, olives etc)
Instructions
Put flour, yeast and sugar in a large bowl Add 150ml of boiling water and 150ml cold water to a jug Add oil and salt to the warm water and pour into the flour mix Stir together with a spoon and then knead the dough until it’s soft and slightly sticky (if it’s too dry add a splash of cold water) Dust your surface with flour and knead the dough for 10 minutes Place dough in a large bowl and cover with clingfilm greased with a few drops of olive oil Leave to rise in a warm place for 1 hour, or until it’s doubled in size Heat the oven to 220°and put a baking sheet on the top shelf to heat up Knock the dough back by punching it with your fist a few times, then knead again Mix the tomato sauce ingredients together and set aside Divide the dough into 2-4 pieces, depending on how big you want your pizzas to be Roll out the bases, dust your pizza base and baking sheet with flour and place the base on the sheet Spread the tomato sauce on top of the base and add your toppings Drizzle with olive oil and bake for 10-12 minutes
Vegan Mini Quiche
Ingredients
500g vegan shortcrust pastry (Jus Roll is a great shop bought version, or you can make your own) 300g chickpea flour (gram flour) 3 cups boiling water Vegan stock 4 tbsp nutritional yeast (buy online and in health food stores) ½ tsp tumeric ½ tsp garlic powder ½ tsp salt Black pepper 150g of your choice of filling (onions, leeks, peppers, grated carrots, mushrooms etc or you could add vegan cheese or sausage etc) Herbs and spices (optional)
Instructions
Heat oven to 180° Grease a 12 cup cake/muffin tin with oil Roll out pastry to about 2mm thick and line each cup Add water, stock, yeast, seasoning and herbs in a pan and bring up to a gentle boil Add the flour, turn down the heat and stir, when it becomes thick and smooth add your cooked filling of choice Divide the mixture between the prepared cases and put in the oven for 10 minutes After 10 minutes open the oven door to release the steam then cook for a further 15 minutes until nicely set
Heat oven to 180° Line a 23 x33 cm (or 9 x 13 inch) baking tin Mix dried ingredients in a large bowl Add the liquid ingredients and mix well Pour mixture in the prepared baking tin Bake for 25 to 35 minutes until the top is no longer shiny Leave to cool for 10 minutes before cutting into squares
